I was really excited to read about Database Table Version History (https://amperity.canny.io/changelog).

Unfortunately, I think the text is misleading as this functionality is only available for sandboxes and not the production instance. This functionality would really be helpful for the production instance because sandboxes only persist for a short amount of time.
